Apple Streusel Cake

  • 50g pecans
  • 50g plain flour
  • 25g soft brown sugar
  • 25g butter

  • 140g butter, softened
  • 140g brown sugar
  • 2 large eggs
  • 225g self-raising flour
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 3 tbsp milk
  • 500g eating apples, peeled, cored and diced
  1. Preheat the oven to 160C. Line the base of a round cake tin.
  2. Put the top 4 ingredients into a food processor and blitz to a crumbly texture. Transfer to a bowl and set aside for the topping.
  3. Beat the butter and sugar until light and fluffy. Add the eggs one at a time and beat until fully combined.
  4. Sift in the flour, baking powder and spice, followed by the milk and apples and mix thoroughly.
  5. Spoon the mixture into the tin and sprinkle over the topping.
  6. Bake in the oven for 1 hour and 10 mins, then remove from oven and cool for 10 mins in the tin before turning onto a wire rack to cool completely.

This is one of the nicest cakes I have tried, as I love fruit in cakes and this is a really moist one.
