BBQ Marinades for Fish

Marinade for white fish –Lemon and Garlic Butter with herbs

  • 30g butter, melted
  • 3 cloves garlic, crushed
  • Juice of ½ lemon
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp flat leaf parsley, White Fish Marinadechopped
  1. Put the butter, garlic and lemon in a bowl or dish and mix well. 
  2. Place the fish in the bowl and coat well. Cover with cling film and chill in the fridge until ready to use.
  3. When ready to BBQ, place the fish in foil and sprinkle with herbs. Close the foil.
  4. Cook on the BBQ and open the foil half way through cooking.

­­­­­­­­­­­­­­­­­­­Marinade for Salmon- Brown Sugar, Soy and LemonSalmon Marinade
  • 3 tbsp dark soy sauce
  • Zest of a lemon
  • 1 tsp ground black pepper
  • 3 tbsp dark brown sugar
  • 2 tbsp vegetable oil
  • 2 garlic cloves, crushed

 

  1. Place all the ingredients in a bowl. Put in the salmon and coat well.
  2. Cover with cling film and chill until ready to cook.
  3. BBQ on low, basting with the rest of the marinade several times.

 

Marinade for Salmon or Trout – Soy, Sherry and Honey 

  • 3 tbsp sherry
  • 3 tbsp light soy sauce
  • 1 garlic clove, crushed
  • 1 tbsp olive oil
  • 2 tbsp honey
  • Juice of half a lime
  1. Follow instructions as for Salmon recipe.
