Chocolate Whoopie Pies

  Makes 12

  • 125g butter
  • 150g dark chocolate
  • 225g granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 250g plain flour
  • 30g cocoa powder
  • ½ tsp baking powder
  • Filling
  • 50g butter
  • 75g icing sugar
  • 50g plain choc
  1. Preheat the oven to 180C. Line a baking tray with greaseproof paper, or if you have a whoopie pie tin, grease with melted butter.
  2. Melt butter and chocolate together in a bowl (microwave for 1 min 30 secs)
  3. In a mixing bowl, whisk together vanilla extract, eggs and sugar, then fold in the chocolate mixture.   
  4. Stir in the flour, cocoa powder and baking powder until you have a smooth thick paste.
  5. Place tablespoonfuls of the mixture onto the baking sheet/tin.
  6. Melt the reserved 50g peanut butter until runny and drizzle all over the top.
  7. Bake for 8 mins, then remove from oven and after a few mins to cool, remove onto a wire tray to cool. Repeat with the next batch.
  8. For filling, beat together the filling ingredients and spread on half the cakes, sandwiching another on top.

Some recipes suggest a marshmallow filling which you may prefer. Simply place a marshmallow on each biscuit and return to oven for a couple of minutes or until they are soft, then sandwich together.
