Leek and Ham Muffins

Leek and Ham Muffins 1tick-150x150[1]    Makes 12

  • 1 tbsp oil
  • 1 leek, finely chopped
  • 280g plain flour
  • 2 tsp baking powder
  • ½ tsp Bicarbonate of soda
  • 1 egg, beaten
  • 300 ml plain yoghurt
  • 4 tbsp butter, melted
  • 25g cheddar cheese, grated
  • Handful fresh chives or parsley, chopped
  • 150g cooked ham, chopped
  1. Line a muffin tin with cases. Heat the oil in a saucepan, add the chopped leek and cook for 2-3 minutes, until softened.
  2. Heat Oven to 200C.
  3. Sift the flour, baking powder and bicarb into a large bowl and mix together.
  4. In a separate bowl or large jug, Mix together the egg, melted butter and yoghurt. Add the cheese, herbs and cooked leek and half of the ham and mix well.
  5. Add the egg mixture to the flour. Gently stir together until just combined. It is fine if it is a little lumpy.
  6. Divide the mixture between the 12 muffin liners, so they are about two thirds full.
  7. Sprinkle over the remaining chopped ham and bake for 25-30 minutes when they should be golden.
  8. Either serve warm, or cool on a wire rack.

These are great, either for snacks and packed lunches, or parties and buffets.
