Lemon and Mint New Potatoes

Lemon and Mint New Potatoestick-150x150[1]     Serves 4

  • 1 pack baby new potatoes
  • 2 tbsp light salad cream
  • Handful of fresh mint, chopped
  • 1 tbsp lemon juice

 

  1. Wash the potatoes and place in a pan of water. Put on the lid.
  2. Bring to the boil and simmer for 20 minutes until tender.
  3. Drain and remove lid.
  4. Add the salad cream, mint and lemon juice, replace lid and shake vigorously to combine.

Lovely either warm or cold.

Ideal with a BBQ
