Jaffa Whoopie Pies

   Makes about 15

  • 125g butter, softened
  • 160g caster sugar
  • 3 tsp finely grated orange peel
  • 2 eggs
  • 340g plain flour
  • 1 tsp bicarbonate of soda
  • ½ tsp baking powder
  • 125 ml buttermilk
  • 50g soft cheese
  • 100g icing sugar
  • 100g plain choc orange
  1. Preheat the oven to 180C. Line a baking tray with greaseproof paper, or if you have a whoopie pie tin, grease with melted butter.
  2. In a mixing bowl, beat together butter, sugar and orange rind until light and fluffy.    
  3. Add eggs and beat well.
  4. In a separate bowl, sift together flour, bicarb and baking powder. Add half of it to the butter mixture.
  5. Stir in the buttermilk and then add the rest of the flour, stirring until just combined.
  6. Put tablespoons full of mixture on the baking trays/tin and bake for 10 mins until puffed up and golden.
  7. For filling, mix together the filling ingredients and spread on half the cakes, sandwiching another on top.

Sprinkle a little icing sugar over if you like a nice presentation, or for friends coming round.
