Peanut, Onion and Herb Bread

Peanut, Onion and Herb Breadtick-150x150[1] 

  • 500g strong white bread flour
  • 1 sachet dried yeast
  • 1 tsp salt
  • 3oo ml warm water
  • 1 tbsp olive oil
  • 4 tbsp peanut butter
  • 3 spring onions, finely chopped
  • 1 tbsp dried herbs
  1. Put the flour in a large mixing bowl, stir in the salt and yeast and make a well in the centre.
  2. Pour in the water, spring onions, herbs and peanut butter and combine to a dough.
  3. Either on a floured surface, or in an electric mixer with the dough hook, knead for 10 minutes, then leave to rest for 5 minutes covered with a tea towel.
  4. Tip onto an oiled baking tray and shape into a flattish round and slash the top with a sharp knife.
  5. Cover with a tea towel and put in a warm place for an hour to double in size.
  6. Heat the oven to 200C and bake for 30 minutes until firm and golden brown.

You can use any herbs, but I find that either sage or thyme is most aromatic.
