Double Chocolate Cookies

    makes about 15

  •  1 cup oats
  • ½ cup butter
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 1 cup plain flour
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 200g milk chocolate chips
  • 200g white chocolate, roughly chopped
  1.  Preheat the oven to 180C.
  2. Blend the oats to a fine powder.
  3. Cream the butter and both sugars until light and fluffy.
  4. Add the eggs and vanilla extract, then mix in flour, oats, salt, baking powder and bicarb.
  5. Stir in the chopped white chocolate and milk chocolate chips.
  6. Now for the sticky bit. Roll into little balls in your hands (1 inch round) and place about 3 cm apart on a greased baking sheet. (No need to grease if using stoneware)
  7. Bake for about 13 – 15 mins until starting to brown.
  8. Let cool in the tin and transfer to a wire tray.

    If you want the cookies to look brown, add 2 tbsp of cocoa powder at step 4.
