Sweet Potato and Coriander Cakes

  • 2 medium potatoes, diced
  • 2 large sweet potatoes, diced
  • Handful coriander, chopped
  • 1 tsp cumin seeds
  • 75g soft cheese
  • 50g plain flour
  • 1 egg, beaten
  • 1 tbsp olive oil

 

  1. Boil and simmer potatoes and sweet potatoes until tender. Drain and leave in the pan without the lid to dry out a little.
  2. Mash the potatoes with the egg, coriander, cumin seeds, soft cheese and flour.
  3. Season with salt and black pepper and shape into several cakes on a floured board.
  4. Heat the oil in a frying pan and fry for 2-3 minutes each side.

These are great as a side or a starter as they are nice and light.

You could also serve as a light supper with mango chutney.
