Chicken Skewers with Carrot and Apple Salad

    healthy  Serves 2

  • 2 skinless chicken breasts, cut in to 2cm cubes
  • Marinade
  • Juice of a lime
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 garlic cloves, crushed
  • 2 tsp finely grated ginger
  • 2 tbsp natural yoghurt
  • Salad
  • 2 large carrots
  • 2 eating apples, unpeeled and grated
  • 4 tbsp clear honey
  • Juice of ½ lemon
  • 2 tbsp chopped fresh mint
  1.  In a bowl, mix together the marinade ingredients, add the chicken cubes and season with salt and pepper.
  2. Cover chicken in the marinade, cover bowl with cling film and chill in fridge for 30 mins.
  3. Mix salad ingredients in another bowl, season to taste and place in fridge to chill.
  4. Heat oven to 200C.
  5. Take chicken pieces and thread them onto skewers.
  6. Place on an oven dish/baking tray and cook for 20 mins until meat is cooked through.
  7. Place on plates on top of salad and serve.

 You can BBQ the skewers rather than cooking them in the oven if you prefer.
